du Boulay Contracts are delighted to have completed the interior fit-out of The Fulham Wine Rooms, a wine bar/merchant and restaurant combination, with an interesting and unique method of serving the wines.

The concept behind the Wine Rooms is to take wine lovers on a tasting adventure whilst also enjoying delicious food. The founders Thor Gudmundsson and Richard Okroj have sought to introduce their customers to great celebrated wines normally only sold by the bottle and to try wines that are less familiar. 48 wines are dispensed by the glass by an “Enomatic” fridge which stores the wines under a blanket of inert gas keeping the wine fresh and retaining its flavour and always at the optimum temperature. New wines are introduced to the list fortnightly and the list is designed to excite enthusiasts and connoisseurs alike. This enables them to purchase just one or two glasses from a bottle of wine giving them the option of trying wines that may normally be out of their price range.

The design was undertaken by Thor and Richard in collaboration with du Boulay and includes bespoke timber display shelving and a new dispense bar with zinc top. The layout of the former “Pitcher and Piano” has also been altered to provide a dining/tasting room at the back of the restaurant.

du Boulay with their years of experience were able to take our conceptual design and turn it into a reality. We are delighted with the results.
— Thor Gudmundsson

The Wine Rooms are a complete wine experience – wine bar, retail and dining. du Boulay Contracts also fitted out the Kensington Wine rooms which opened in April 2009 and have previously worked for the same client partnership on their highly successful chain of Frog Pubs in France.
